Chicken Pot Pie Crumble

This stuff is so delicious, and doesn't have condensed cans of soup which makes it lighter and healthier. Not to mention it's delicious {Did I say that already?} Unfortunately this ended up on our my "will not make list" for a couple of years because I might've been in my first trimester with Lil when I made it. Oops. It's back on the list now and it's awesome!

Chicken Pot Pie Crumble
Chicken and Sauce:
1 ½ pounds chicken (about three medium-size chicken breasts)
2 cups low-sodium chicken broth
1 tablespoons olive oil
1 onion , chopped fine (about 1 cup)
3-4 carrots, peeled and sliced (about 1 cup)
2-3 stalks celery, chopped (about ½ cup)
½ teaspoon salt
½ teaspoon pepper
4 tablespoons (1/2 stick) butter
½ cup flour
1 cup milk
3/4 cup frozen peas
Crumble Topping:
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
½ teaspoon pepper
1/8 teaspoon cayenne pepper
6 tablespoons butter, cut into 1/2-inch cubes and chilled
3/4 cup freshly grated Parmesan cheese
1 cup heavy cream

DIRECTIONS
To prepare the chicken, place the chicken and broth in a large Dutch oven or pot and bring it to a simmer over medium heat. Cook the chicken until it is just done (don’t overcook or it will dry out) – about 10-12 minutes. Alternately, if you are planning in advance, you can place the chicken and broth in a slow cooker and cook on high for 3 hours or low for 5 hours. Transfer the cooked chicken to a medium bowl. Pour the broth through a fine-mesh strainer into a liquid measuring cup and reserve. Return the pot to the stovetop (no need to wash if you used it to cook the chicken).
Preheat the oven to 400 degrees. In a large bowl, combine the flour, baking powder, salt, pepper, and cayenne. Sprinkle the chilled butter pieces over the top of the flour. Using your fingers or a pastry cutter, rub the butter into the flour mixture until it resembles coarse crumbs. Stir in the Parmesan cheese. Add the cream and stir until just combined. Crumble the mixture into irregularly shaped pieces onto a baking sheet lined with parchment paper. Bake the crumble topping until fragrant and starting to brown, about 15 minutes, tossing halfway through. Set aside.
For the filling, heat the olive oil in the now-empty pot over medium heat. Add onion, carrots, celery, salt and pepper. Cover and cook, stirring occasionally, until just tender, about 5 minutes. While the vegetables are cooking, shred the chicken into small bite-size pieces. Transfer the cooked vegetables to the bowl with the chicken; set aside.
Over medium heat melt the butter in the empty pot. Stir in the flour and cook for one minute, stirring constantly. Slowly whisk in the reserved chicken broth and milk. Bring to a simmer and stir occasionally until the sauce thickens, about 5 minutes, taking care not to burn the bottom. Add 1/2 teaspoon salt and 1/2 teaspoon pepper. Remove from the heat and stir the chicken, vegetables and peas into the sauce.
Pour the mixture into a 9×13 pan. Scatter the crumble topping evenly over the filling. Place the 9X13-inch pan on a rimmed baking sheet and bake at 400 degrees until the topping is well browned, about 15-20 minutes. Let the casserole stand for 10 minutes before serving.

Carnitas Tamale Pie

The Carnitas that we made were delicious, and we loved them. But this pie. Ahhhhhhmazing. So delicious, and yummy. The more cheese the better. The much better.

Carnitas Tamale Pie
⅔ cup all-purpose flour
½ cup yellow corn meal
3 tablespoons granulated sugar
1 tablespoon baking powder
¼ teaspoon salt
2 tablespoons vegetable oil
1 can diced green chiles
⅓ cup milk
1 egg
1 can cream corn
2-3 cups leftover carnitas
1 cup enchilada sauce
1 cup shredded white cheese (Jack, White Cheddar, Pepperjack, etc.)

Preheat oven to 400 degrees. Whisk the cornmeal, flour, salt, baking powder, and sugar. Stir in the oil until the mixture makes soft crumbs. Whisk in the milk and egg. Add the cream corn and green chiles and stir until just combined. Bake in a 9-inch square pan (or larger, depending on how thick you want it) for 25 minutes or until set. Since it's a tamale-like base, it won't be completely dry like a cornbread. It's supposed to be just a little mushy.
Poke holes in the crust with a fork. Pour the enchilada sauce over the crust. Squeeze or drain excess moisture out of the carnitas and arrange on top of the crust. Sprinkle with cheese.
Reduce oven temperature to 350. Cover with foil, return to oven, and bake for 20 minutes. When everything is heated through, remove foil and let bake for another 5-10 minutes or until cheese is melted and bubbly.
Top with chopped cilantro, allow to cool for 5 minutes, and cut into slices or scoop into bowls.

Swiss Chicken Breasts & Stuffing

This is what I have come to call a "Mormon meal." You can whip it up super quick, but it's not very healthy, and almost all of these meals have cream of chicken soup in them. Don't get me wrong, this is delicious...but it's so not healthy, so I make it only when I don't have the time (or energy) to make anything else :)

Swiss Chicken Breasts & Stuffing
3-4 Chicken breasts
Swiss cheese slices
1 can cream of chicken soup
1 package stuffing
3/4 can water

Make stuffing, set aside. Put chicken breasts in a 9x13 pan with a slice of cheese on each. Mix cream of chicken soup with water & pour on chicken. Add stuffing on top. Cover and bake for 1-1 1/2 hours depending on size of chicken pieces.

{Mom's} Enchiladas

These are my mom's "famous" easy enchiladas. I love them because they're fast, easy, and delicious!

{Mom's} Enchiladas
1 package flour tortillas
1 1/2-2 pounds hamburger
1 onion, diced
Lawry's enchilada sauce packet
3 cups water
1 6 ounce can tomato paste

Preheat oven to 350.
Make sauce according to package directions. Put a little sauce on the bottom of a 9x13 pan.
Brown hamburger with onion. Put 3/4 of the rest of the sauce with the hamburger and mix well. Put mixture inside tortillas, roll, and put into the pan. Cover with the rest of the sauce, and cheese.
Bake for 30 minutes covered. Remove cover and bake for 10 more minutes.

Tater Tot Casserole

I feel a little silly putting this on my blog. It is definitely a typical "Mormon, casserole, 90's" dish. But I love it! I love tater tots too much to admit. So add some tomato/cream of mushroom soup…and I'm there. Plus it's easy.

Tater Tot Casserole
1 pound hamburger
1 onion, chopped
1 bag tater tots
1 can green beans, drained
1 can tomato soup
1 can cream of mushroom soup {optional}
1/2 cup cheese

Preheat oven to 350 and grease a 9x13 pan.
Heat large saucepan over medium high heat. Add hamburger and onion and brown. Add the soups and beans to the hamburger mixture and warm over low heat.
Place a layer of tater tots in the pan. Place hamburger mixture on top, then sprinkle with cheese.
Bake for 30 minutes and eat warm!

{Grandma's} Funeral Potatoes

I have never had any funeral potatoes that taste like these. They are super delicious and I swear that they are from Heaven. Which is awkward since they're funeral potatoes…

{Grandma's} Funeral Potatoes
10-12 large potatoes
1/3 grated onion
2 cups sour cream
2 cans cream of chicken soup
2 cups grated cheese
1 cube of margarine
1 cup crushed cornflakes

Boil potatoes for 40 minutes then shred. In a large saucepan, put 1/2 the butter, cream of chicken soup, sour cream, cheese & onion. Heat until cheese is melted. Pour that over the potatoes in a big bowl and mix. Put that mixture in a 9x13. Melt the other 1/2 of butter and mix with cornflakes. Put those on top of the potato mixture.
Bake at 350 for 30-45 minutes.

Sweet Potato Crunch

This lovely was sent to me by my mother-in-law, Sharrie. Its pretty easy and so delicious, especially for Thanksgiving.
Sweet Potato and Carrot Crunch

Sweet Potato Crunch
3 large sweet potatoes
4 tablespoons butter, softened
2 eggs
1/3 cup evaporated milk
1 teaspoon vanilla
1/2 cup sugar

Topping:
1/3 cup butter, melted
1 cup brown sugar
1/2 cup flour
1 cup chopped pecans

Bake Sweet potatoes until tender at 350 for 45-60 minutes. Remove skins, mash, then add rest of ingredients and mix well. Spread in a baking dish.
Mix the topping ingredients well, the spread over the sweet potatoes. Bake at 350 for 30 minutes.

Spaghetti Pie

Pretty easy and awesome. I love the casserole version of spaghetti. It's delicioso.

Spaghetti Pie
12 ounces thin spaghetti or vermicelli noodles
1 pound lean ground beef or ground turkey
1 small white or yellow onion, diced
1 clove garlic, finely minced (or 1/2 teaspoon garlic powder)
1 teaspoon salt
1/2 teaspoon black pepper
28-ounce can crushed tomatoes
16-ounces tomato sauce
1 teaspoon dried basil
1/2 teaspoon dried oregano
4 ounces light cream cheese, softened
1/2 cup lowfat cottage cheese {or ricotta or sour cream}
3/4 cup Parmesan cheese, divided
3/4 cup mozzarella cheese, divided

Lightly coat a deep 9 or 10-inch pie plate {Or 9x9 square, 7x11, anything bigger than a normal pie plate} with cooking spray and set aside. Preheat the oven to 400 degrees F.

In a large pot of boiling, salted water, cook the noodles until al dente according to package directions. 

While the noodles boil, heat a large 12-inch skillet over medium-high heat and add the ground beef or turkey, breaking it into pieces with a wooden spoon. Add the onion, garlic, salt and pepper. Cook, stirring occasionally and continuing to break up the meat, until the meat is cooked through, 5-7 minutes. 

Remove the skillet from the heat and drain the excess grease, if any. Return the skillet to medium heat and stir in the crushed tomatoes, tomato sauce, dried basil and oregano. Simmer the sauce over medium or medium-low heat for 10 minutes.
When the noodles are done cooking, drain and return to the pot. Immediately stir in the cream cheese and toss the noodles by lightly lifting them up and over with tongs until the cream cheese is mostly melted. Stir in the cottage cheese, 1/2 cup of the Parmesan cheese and 1/2 cup of the mozzarella cheese. 

Toss until the noodles are evenly coated. Stir in 2 cups of the red sauce. Keep the remainder of the red sauce warm on the stove.
Scrape the noodles into the prepared pie plate and using a flat spatula, press the noodles evenly into the dish so they are tightly pressed together and evenly flat across the top. Sprinkle the remaining 1/4 cup 

Parmesan and 1/4 cup mozzarella cheese across the top.
Bake the spaghetti pie for 20-22 minutes, until it is hot and bubbly and the cheese is golden on top. Let the dish rest for 10 minutes. Cut into slices and serve with remaining red sauce.

{Overnight} Sausage and Egg Casserole

Umm…oober delicious. Especially all the cheese. Although, I might cut down on that next time I make it, just to make it a little more healthy {or something…}.

Overnight Sausage and Egg Casserole
6-8 slices bread {I used wheat
about 1/4 C softened butter (just for buttering the bread slices)
4 C grated colby jack cheese {could use half pepperjack for some spice}
12 oz pork sausage, browned and drained if necessary
1 4 oz can green chiles, or a 7 oz can if you love ‘em
6 eggs
2 C milk
1 tsp kosher salt
1/2 tsp paprika
1 tsp oregano
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp dry mustard

Start by removing the crusts from your bread and lightly buttering one side. Start by removing the crusts from your bread and lightly buttering one side.

Place bread butter side down in a 9×13 baking dish. I usually need 6 pieces of bread, plus 1 cut in half to finish up the bottom row. You just want the bottom of the pan covered with no big gaps.

Grate your cheese and sprinkle it evenly over the top of the bread. Spread the browned sausage on top of that, and top with the green chiles.

In a medium sized mixing bowl whisk eggs. Add milk and then seasonings and whisk to combine well. Slowly stir the egg mixture while you pour it evenly on top of the assembled casserole. You’ll want to keep stirring or else the spices will all gather in one spot and drop onto one single piece of casserole.

Cover well and place in the refrigerator overnight.

In the morning preheat your oven to 350 degrees. Pop the casserole in there and bake (uncovered) for 50-60 minutes. You’ll want the center to be set and the outside edges to be golden brown. It’s important to let it cool for at least 10 minutes before cutting into it or it will just fall apart.

{Healthy} Beef and Bean Enchiladas

Awesome. Delicious. And guess what kind of beef I used? Canned. From the Lindon Cannery. It was delicious and it was so easy because of the canned meat.

{Healthy} Beef and Bean Enchiladas
2 tsp olive oil
2 cups sliced bell peppers, any color
1 medium onion, sliced
2 cloves garlic, minced
8 oz lean ground sirloin
1 15 oz can black beans, drained and rinsed
1 tablespoon chili powder
1 tablespoon ground cumin
½ tsp paprika
pinch cayenne pepper
½ tsp salt
12 6″ whole wheat tortillas {I used 8-10" tortillas)
1 16 oz jar salsa, divided
1 cup shredded Monterrey Jack cheese, or any blend you like

Heat a large skillet over medium high heat. Add olive oil, swirling to coat. Add the peppers and onions and saute for about 5 minutes, until softened. Add the garlic and stir for 30 seconds.

Add ground beef {or canned shredded beef} and use a fork to crumble it. Cook for about 4-5 minutes, or until the mixture is no longer pink.

Stir in the chili powder, cumin, paprika, cayenne, salt, black beans, and ¼ cup of the salsa. Mix well.

Now preheat your oven to 350º F. Spread half of the remaining salsa over the bottom of a 13×9” baking pan.

Lay your tortillas on a clean work surface and spoon a heaping ¼ cup onto the center of each. Roll tightly and line them up, closely packed into the baking pan, seam side down.

When all of the tortillas have been filled and placed into the pan, evenly pour the remaining salsa over the top.

Sprinkle the pan with the cheese.

Bake for 20 minutes. Allow the enchiladas to cool for about 10 minutes before serving. Garnish with sour cream and fresh cilantro.

Cowboy Dinner

This is one of the two dinners that Scott requests all the time. I would say his favorite dinner of all time. It's easy, quick, and pretty healthy. Sweet, salty, and hearty. Seriously, make this and you will love your life.

Cowboy Dinner
9x13 pan
1-1 1/2 pounds lean ground beef {or ground turkey}
1 medium yellow onion, diced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup-1 can corn
1 can green beans {this was my addition}
1 1/2 cups salsa (jarred or homemade)
1 can (15 ounce) black, pinto or white beans, rinsed and drained
1 cup shredded cheddar cheese

Cornbread Topping:
½ cup cornmeal
1 ½ cup flour
1/3 cup sugar
1 tablespoon baking powder
½ teaspoon salt
1/3 cup oil
2 eggs, beaten
1 ¼ cup milk

DIRECTIONS:
Preheat the oven to 375. Lightly grease a 9X13-inch pan and set aside.

In a large 12-inch skillet, brown the ground beef and onion, adding the salt and pepper, over medium-high heat until the beef is no longer pink. Drain the grease from the pan. Stir in the corn, salsa, and beans. Pour the beef mixture into the prepared 9X13-inch baking pan and set aside.

For the cornbread, combine the cornmeal, flour, sugar, baking powder and salt in a medium bowl. Make a well in the center and add the oil, beaten eggs and milk. Whisk together until just moistened and no dry spots remain.

Sprinkle the cheese over the beef mixture and pour the cornbread batter over the cheese and beef mixture. Gently spread the cornbread to the edges of the pan, evening it out over the top of the casserole.

Bake for 30-40 minutes until the edges are bubbly and a toothpick inserted into the center of the cornbread comes out clean or with a few moist crumbs. Let the casserole stand for 10 minutes before serving.

Greek Pastitsio (Casserole Style)

If you're wondering what a pastitsio is (like I was...) look here for the answer! Noodles, cheese, white sauce...how is that going wrong? This was oh so delicious. Lots of compliments from my hubby and father-in-law. As always...followed with bread and jam of course!

Delicious Greek Pastitsio {Casserole-Style}
Makes 9x13 pan12 ounces penne pasta
1 pound ground turkey or ground sirloin
1 1/2 cups chopped yellow onion (from about 1 large onion)
1 3/4 teaspoon salt, divided
1 teaspoon pepper
5 garlic cloves, finely minced
2 tablespoons all-purpose flour
8 ounces light cream cheese
2 cups milk, 1% of skim work great
1/8 teaspoon nutmeg
1 (14.5-ounce) can diced tomatoes,drained
1 cup shredded part-skim mozzarella cheee
2 tablespoons chopped fresh flat-leaf parsley

Coat a 9X13-inch baking dish with cooking spray and set aside. Preheat the broiler.
In a large pot of lightly salted, boiling water, cook the penne pasta according to package directions.
While the pasta is cooking, heat a large 12-inch skillet over medium heat. Add beef or turkey to the pan with the diced onions and 1 teaspoon salt and 1 teaspoon pepper. Cook, stirring to break up the meat into small pieces, until the meat is cooked through. Drain excess grease from the meat. Add the garlic and cook until fragrant, another minute or so. Sprinkle the flour over the meat mixture, stirring to combine, and cook for 1-2 minutes over medium heat. Add the cream cheese in pieces, scattering it over the meat. Let it melt into the meat and stir to combine. Whisk or stir in the milk, nutmeg, 3/4 teaspoon salt and tomatoes. Stir to combine well and bring the mixture to a simmer. Cook 5-6 minutes until the mixture is slightly thickened and is thoroughly heated through.
Stir in the pasta and spoon the pasta mixture into the prepared pan. Sprinkle the mozzarella cheese evenly over the pasta and broil for about 3-5 minutes (watching carefully so it doesn’t burn!). Remove from the oven and sprinkle with parsley. Let it stand fora bout 5 minutes before serving.

{Note: I think I'll add a little more nutmeg next time to kick it up a notch}

Spaghetti Squash Au Gratin



Half of the reason I make any recipes that I make is because of pinterest. Thank you for making my life more fun...and making me fatter.
This one was actually pretty healthy. I guess "pretty healthy" is kind of relative, but I didn't feel super guilty eating this...so thats a good sign. I must say it was pretty delicious for "pretty healthy"!

Spaghetti Squash Au Gratin
Serves 6
1 medium spaghetti squash
2 tablespoons butter
1 small yellow onion, cut in half and very thinly sliced
¼ teaspoon red pepper flakes, or more if you like it spicy
1 teaspoon fresh thyme
½ cup sour cream
½ cup shredded cheddar cheese

Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a ¼ inch of water and microwave for 10 -12 minutes. In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color. Salt and pepper to taste.

Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese.

Place into a 375º for 15 – 20 minutes until golden brown on top.

Note: I'm planning on adding more spice next time. Maybe herbs...definitely salt and pepper at least.

Baked Pasta and Broccoli with Ham and Cheesy-Creamy Cauliflower Sauce

This was yummy, and surprisingly very healthy. Make sure that you pay attention to the milk mixture...I burnt the bottom of mine, but didn't scrape it off the bottom of the pan, so it didn't even taste burnt. Thank you Amelia...

Baked Pasta and Broccoli with Ham and Cheesy-Cauliflower Sauce
9x13 pan
1 teaspoon extra-virgin olive oil
1 small head cauliflwer, cored and chopped (about 3 cups)
6 garlic cloves, roughly chopped
4 medium shallots, roughly chopped (or sub about 1/2-3/4 cup diced onion)
Kosher salt and fresh cracked black pepper
4 teaspoons all-purpose flour
4 cups skim milk
1/4 teaspoon ground nutmeg (I did just under that, between 1/8-1/4)
6 ounces Pecorino cheese, grated (about 2 cups- could sub fresh grated Parmesan)
1/2 pound medium multigrain pasta shells or bowties
1/4 pound sliced smoked ham, chopped (about 1 cups)
1 medium bunch broccoli, trimmed and cut into florets (3-5 cups)
optional: 1/2 cup toasted whole-wheat panko (Japanese bread crumbs) for serving.

Heat oil in a medium saucepan over medium heat. Add cauliflower, garlic, shallots, and 1/2 teaspoon salt; cook until softened but not brown, about 10 minutes, stirring occasionally. Sprinkle with flour; stir to coat well.

Gradually stir in milk; bring to a boil. Reduce heat; gently simmer until cauliflower is very soft, about 15 minutes. Let cool for 5 minutes. Transfer all to a blender, and puree with nutmeg and half the pecorino until smooth, about 2 minutes.

Preheat oven to 400 degrees. Meanwhile, bring a large pot of water to a boil. Cook pasta until slightly tender but not fully cooked, about 5 minutes. (Note: If you like your broccoli pretty tender, add it to boiling pasta water for a couple of minutes before draining) Drain well; return to pot. Add ham, broccoli, and cauliflower sauce; toss to combine. Transfer to an ovenproof 3 1/2 quart baking dish. Sprinkle with remaining pecorino, and bake until bubbling in center, about 30 minutes. Heat broiler, and broil until golden brown on top, 1-2 minutes. Divide among dishes, top with breadcrumbs (if using), and serve immediately.

Tomato Florentine Pasta Bake

Do you ever see those recipes that are hanging next to the spices at the grocery store and think "Who actually picks those things up?" I think that 99% of the time. However, this 1%-time I picked this one up and am SO glad I did. I make this probably once a month or so. It's a little spicy, with a little kick of cinnamon. I really love it.

Tomato Florentine Pasta Bake
Makes 6 servings
1/2 pound ground turkey
1/2 cup finely chopped onion
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/2 cup water
2 1/4 teaspoons oregano
2 teaspoons sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon garlic powder
1/4 teaspoon crushed red pepper
2 cups uncooked penne pasta (6 ounces)
1 package (10 ounces) frozen chopped spinach, thawed, drained and squeezed dry
1 1/2 cups part-skim ricotta cheese
1/2 cup shredded part-skim mozzarella cheese

Preheat oven to 375°F. Cook turkey and onion in large nonstick skillet on medium heat until meat is no longer pink. Stir in tomato sauce, tomato paste, water, oregano, sugar, cinnamon, garlic powder and red pepper. Bring to boil. Reduce heat to low; simmer 10 minutes, stirring occasionally.

Meanwhile, cook pasta as directed on package; drain well. Stir pasta and well-drained spinach into sauce until well mixed. Spread 1/2 of the pasta mixture in 11x7-inch baking dish. Spread ricotta cheese evenly over pasta. Top with remaining pasta mixture. Sprinkle evenly with mozzarella cheese.

Bake 15 minutes or until heated through. Let stand 5 minutes before serving.

Frittata

Another Becky recipe. She made this, I'm sure, many times for football teams since she raised 5 strapping boys. It was pretty good, although I must say...follow her advice on the potatoes. I didn't and wish I would've.

Frittata
Makes 9x13 pan
1 large onion, chopped
1 (4-ounce) can green chiles
2 cloves garlic, minced
16 lil' smoked sausages (or bacon, sausage, or nothing)
1 cup steamed and diced potatoes (use red new potatoes or hash browns)
1/2 cup picante sauce (I used more)
1 tablespoon chili powder
2 tablespoons butter
16 eggs, slightly beaten
1 1/2 cups grated cheddar or monterey jack cheese

Saute all ingredients except eggs and cheese in a large skillet with butter until the onion is translucent. Transfer to lightly oiled 8x10 (or 7x11) baking dish. Add eggs and handful of cheese. Bake at 350 for 20 minutes. Remove and sprinkle remaining cheese on top. Lower temperature to 300. Bake until brown and firm in center, 5-10 minutes longer. Serves 12 or so. (Don't overcook! I overcooked and had to add a lot of salsa.)

I realize this doesn't make Amelia look like a supermodel, but her hair is awesome, and she's seriously enjoying my frittata. She LOVES it. So...you're going to try it, right?

Enchilada Lasagna

A couple of years ago, I cut a whole bunch of recipes out of a whole bunch of magazines and am JUST getting to them...slowly but surely. So here is one of those...(from Taste of Home).

Enchilada Lasagna
1 1/2 pounds ground beef/turkey
1 medium onion, chopped
1 garlic clove, minced
1 can (14 1/2 ounce) stewed tomatoes, undrained
1 can (10 ounce) enchilada sauce
1 1/2 teaspoon cumin, ground
1 egg, beaten
1 1/2 cups (12 ounce) cottage cheese
3 cups Mexican cheese blend
8 flour tortillas (I used whole wheat), cut in half
1 cup shredded cheddar cheese

In large skillet, cook beef/turkey, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes, enchilada sauce and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.
In small bowl, combine egg and cottage cheese; set aside. Spread a third of the meat sauce into a greased 9x13 baking dish. Layer with half of the cheese blend, tortillas, cottage cheese mixture and remaining meat sauce. Repeat layers. Sprinkle with cheddar cheese.
Cover and bake at 350 for 20 minutes. Uncover, bake 10 more minutes. Let cool 15 minutes before cutting.

Meat & Potato Quiche

Sharrie, my mother-in-law, has some great breakfast recipes that I just had to steal. This is one of those hearty "down on the farm" breakfast dishes. Since marrying Scott, I have had to learn that breakfast is an essential meal. We still have cereal (too often), but this is one of those "make and and eat for 5 days" meals...which I love. Plus it's pretty easy, minus the potato grating.

Meat & Potato Quiche
Serves 6-9 
1/4 cup vegetable oil
6 cup shredded potatoes (4-5 small)
2 cup grated cheese
1 1/2 cup diced ham {or cooked sausage}
1/2 cup chopped onion
2 cups milk total-you will use one can evaporated milk and about 1/3 cup regular milk
4 large eggs {I used 5 medium}
1 teaspoon salt
1/2 teaspoon pepper
2 Tablespoons parsley flakes

Preheat oven to 425. Spread oil in pan, then press in potatoes. Bake for 15 minutes. Meanwhile, beat together: milk, eggs, salt and pepper. Remove potatoes from oven; layer cheese, meat, and onion. Pour milk mixture over all. Sprinkle with parsley. Return to oven and bake 25-35 minutes, til set and knife inserted in center comes out clean. Cool 5 minutes before cutting.
