Soft Double Chocolate Chip Cookies

Oh baby oh baby. So fetchin good. I made them twice in three days {thanks to Braden}.

Soft Double Chocolate Chip Cookies
6 ounces cream cheese, softened
12 tablespoons (3/4 cup) butter, melted and cooled slightly
3/4 (5 1/4 ounces) cup packed light brown sugar
1/3 (2 1/3 ounces) cup granulated sugar
2 teaspoons vanilla extract
1/2 cup (1 3/4 ounces) unsweetened cocoa powder
1 1/2 cups (7 1/2 ounces) cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
8 ounces (1 cup) chocolate chips, semisweet or bittersweet

Preheat the oven to 325 degrees F and line baking sheets with parchment or silpat liners. In a large bowl or the bowl of an electric stand mixer, cream together the cream cheese, melted butter and sugars until light and fluffy. Mix in the vanilla. Add the cocoa powder, flour, baking soda and salt and mix until mostly incorporated with just a few dry streaks remaining. Add the chocolate chips and mix until combined and no dry streaks remain.
Roll the dough into 1 to 1 1/2-inch balls and place about 2 inches apart on the prepared baking sheets. Flatten each ball slightly with the palm of your hand (just barely press, you don't need to flatten it all the way). Bake the cookies for 12-14 minutes until the edges are set but the middles are still soft and gooey. Let the cookies cool for a few minutes on the baking sheet and then transfer to a cooling rack to cool completely.

Salted Caramel Chocolate Chip Bars

Super easy. Delicious. And in bar form...so no batches of cookies!

Salted Caramel Chocolate Chip Bars
12 tablespoons butter, melted and cooled
1 cup brown sugar
1/2 cup granulated sugar
1 egg plus 1 egg yolk
1 teaspoon vanilla
2 cups plus 2 tablespoons flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chocolate chips
11 ounces caramel bits (or 11 ounces caramel squares, unwrapped)
3 tablespoons heavy cream
sea salt, for sprinkling

Preheat oven to 325. Prepare a 9 x 13 pan by lining with foil. In a large mixing bowl or the bowl of a stand mixer, combine butter and sugars and mix until combined. Add egg and egg yolk and vanilla, and mix until combined. Add flour, baking soda, and salt, and mix until just combined (be careful not to over mix). Gently fold chocolate chips into the dough. In a microwave-safe bowl, combine the caramels and heavy cream, and microwave on high power at twenty second intervals, stirring in between, until melted and smooth. Spread half of the cookie mixture in the prepared pan, pushing with your hands to form an even layer. Pour the melted caramel over the top and spread to cover. Sprinkle with sea salt. Top with remaining cookie dough. (I found it easiest to put the cookie dough on a cutting board and smush it with my hands into an even layer about the size of my pan, then transfer it to the baking pan.) Sprinkle the top with more sea salt. Bake 25-30 minutes or until very lightly golden around the edges. Be careful not to over bake! The cookies are best if they are soft and a little gooey. Remove from oven and let cool 10-15 minutes, then remove to a cooling rack. Cool almost to room temperature before slicing.

Mint Brownie and Oreo Hot Fudge Trifle with Minty Cream Cheese Whipped Cream

Okay, this is super delicious but really rich. So serve it with the right crowd.

Mint Brownie and Oreo Hot Fudge Trifle with Minty Cream Cheese Whipped Cream
Brownies:
9X13 pan of brownies, cut into small cubes (see note - you only will use about 3/4 of the pan of brownies)
Mint Cream Cheese Whipped Cream:
8 ounces cream cheese, light or regular, softened
3 cups heavy whipping cream
1-2 teaspoons mint extract
1/2 cup powdered sugar
Oreos and Hot Fudge:
25 mint Oreos, coarsely chopped
1/2 - 3/4 cup hot fudge sauce, warmed slightly

For the whipped cream, in a large bowl, beat together the softened cream cheese with about 1/2 cup of the whipping cream until the mixture is smooth. Add the mint extract, powdered sugar and the remainder of the whipping cream gradually. Mix on high speed until the cream is whipped and the mixture is very thick and creamy.
In a glass trifle dish (or large glass bowl), place in 1/3 of the brownies then 1/3 of the whipped cream, spreading evenly to the edges. Next sprinkle in a little more than 1/3 of the Oreos (about 10 chopped) and finally drizzle with 1/3 of the hot fudge sauce.
Repeat that same layering process two more times (the only difference is that I only used about 4 chopped Oreos for the very final layer - so the first two layers use about 10 chopped Oreos each).
Chill in the refrigerator until ready to serve.

Chocolate Caramel Pecan Pie

Made this for Sharrie's birthday and it was a hit and SO delicious. But you need a seriously deep dish pie plate or get rid of some of the chocolate layer {which is amazingly delicious}.

Pie Crust:
Single pie crust to fit 9.5- or 10-inch pan
Chocolate Layer:
1 cup semisweet or bittersweet chocolate chips
1/4 cup heavy whipping cream
1 (8-ounce) package cream cheese, softened
1/4 cup granulated sugar
1 large egg
Caramel Pecan Layer:
1 1/2 cups coarsely chopped pecans
28 caramels, unwrapped (or about 1 1/2 cups homemade caramel)
1/4 cup heavy whipping cream
1/4 cup (4 tablespoons) butter
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
3/4 cup granulated sugar

Preheat the oven to 400 degrees F. Roll out the pie crust and gently place it in a 10-inch tart or pie plate (see note above). Trim and flute the edges (see tutorial here). Refrigerate or freeze the crust until very cold. Line the crust with foil and weigh down with pie weights or dry beans. Bake for 15 minutes. Carefully remove the foil and weights and bake for another 10 minutes or so until the crust edges are lightly golden and the bottom is no longer doughy. Remove from the oven and let cool completely.
Reduce the oven to 350 degrees F.
For the chocolate layer, in a medium microwave-safe bowl, melt the chocolate chips and cream for one minute. Stir until melted and combined (microwave for short spurts if more time is needed).
In a large bowl (or in a blender), beat the cream cheese and sugar until smooth and combined. Add the egg and mix until just blended. Scrape in the chocolate mixture and mix until smooth.
Spread the chocolate mixture evenly in the cooled crust.
For the caramel pecan layer, lightly toast the pecans in an even layer on a baking sheet in the preheated oven for just a few minutes until fragrant (watch closely so they don't burn).
In a medium bowl, combine the caramels, cream and butter. Microwave at 1-minute intervals, stirring every 30 seconds or so, until melted and smooth. Watch carefully so the caramels don't overcook (this can happen more easily with store-bought caramels). Let the mixture cool slightly.
In a small bowl, whisk together the eggs, vanilla, salt and sugar. Quickly whisk this mixture into the caramel mixture. Stir in the pecans.
Pour the caramel mixture over the chocolate layer. Place the pie plate on a foil-lined baking sheet (just in case of any spillovers or splatters) and bake for 45-50 minutes until the center is almost set (it's ok if it jiggles slightly). Cover the edges of the pie crust part way through baking if it is becoming overly browned.
Let the pie cool for a couple of hours. Serve with a dollop of lightly sweetened whipped cream, if desired. This pie actuality tastes better the second day, in my opinion, so consider making it ahead. It's also delightful slightly warmed (not hot, just a bit warm so the caramel layer softens).

Oreo-Crusted White Chocolate Mousse Torte

This is super rich {but it's white chocolate so it's amazing!} I made this with Bret and Laurel and even though it has quite a few calories...totally worth it.

Oreo-Crusted White Chocolate Mousse Torte
For the crust and garnish:
Butter for preparing the pan
24 Oreo cookies, roughly broken in thirds
6 ounces semisweet chocolate, finely chopped
1/2 cup (4 ounces) heavy cream
For the filling:
10 ounces white chocolate, coarsely chopped
2 cups (16 ounces) heavy cream
1 teaspoon vanilla extract
2 teaspoons unflavored gelatin

Coat the interior of a 9-inch springform pan with butter. Place a circle of parchment in the bottom and butter it as well (I omitted this step and it didn’t stick).
Place the bowl of an electric mixer and wire whip attachment or the beaters in the freezer to chill.
To make the crust, place the broken cookies in the work bowl of a food processor fitted with the metal blade. Pulse until medium-size crumbs are formed. They won’t be uniform but don’t process long enough to make mush- just to grind the cookies into uneven crumbs. Leave the crumbs in the food processor. Place the semisweet chocolate in a medium metal bowl. Pour the 1/2 cup heavy cream into a small saucepan; set over medium heat and bring the cream to a very gentle simmer. Pour it over the chocolate and stir until the mixture is smooth. Add two-thirds of the cookie crumbs; reserve the remaining crumbs. Stir the crumbs to coat them with the chocolate. Spoon and scrape the mixture into the bottom of the prepared pan. Press the chocolate-coated crumbs evenly over the bottom all the way to the edge of the pan, but not up the sides. Set aside.
To prepare the filling, place the white chocolate and 2/3 cup of the heavy cream in a metal bowl placed over, but not touching, a pan of simmering water. Stir occasionally as the chocolate melts. When the mixture is smooth, remove it from over the water and set aside to cool.
In a chilled bowl using the chilled beaters, whip the remaining 1 1/3 cups of heavy cream and the vanilla until soft peaks form.
Pour 3 tablespoons of water into a small saucepan and sprinkle the gelatin over it. When the gelatin has softened, place the saucepan over very low heat and stir the mixture just until the gelatin has dissolved and liquefied. Immediately scrape the gelatin mixture into the white chocolate mixture, and fold gently until well combined. Fold the white chocolate-gelatin mixture into the whipped cream until the mixture is uniform. Scrape the filling into the prepared crust.
Refrigerate the torte until the gelatin has set, at least 4 hours or overnight (I refrigerated mine overnight). To serve, loosen the edges of the torte from the sides of the pan with a small knife. Remove the sides of the pan and run a wide metal spatula between the bottom of the torte and the parchment liner, then lift the torte onto a flat serving plate. Just before serving, sprinkle the torte with the reserved cookie crumbs.

Andes Mint Brownies

So I haven't actually made the brownie part of this recipe, but I'm sure it's amazing. I just threw some Andes "chips" in a brownie mix and it was divine.

Andes Mint Brownies
1 cup butter (2 sticks)
2 cups granulated sugar
4 eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
½ cup cocoa
½ teaspoon salt
1 package Andes mints {or 1/2-3/4 bag of Andes "chips"}

Preheat oven to 350 degrees F. Line a 9X13-inch pan with foil and lightly grease with cooking spray. Set aside.
In a medium bowl, combine the flour, cocoa and salt. Set aside.
Unwrap all the mints and coarsely chop. Set aside.
In a medium saucepan over low heat, melt the butter. Remove from the heat and add the sugar, stirring well to combine. Whisk in the vanilla and then the eggs. Blend well.
Add the dry ingredients to the wet ingredients and mix well. Gently stir in the chopped Andes mints. Pour into the prepared pan and bake for 32-35 minutes, until the brownies are set in the middle but not overbaked. Let cool completely, slice into squares and serve.

Decadent Chocolate Cheesecake

When this sucker says decadent, it means decadent! It was so so so scrumptious, but I could handle only a small piece. And I am no stranger to large portions of rich desserts {just ask mi papa}. But I would totally make it over and over. For a crowd. So I don't spend the next week slowly eating myself into a chocolate cheesecake coma {real thing...true story}.

Decadent Chocolate Cheesecake
Crust:
9-ounce package of chocolate cookies (such as chocolate wafers, graham crackers or teddy grahams)
1 tablespoon sugar
6 tablespoons butter, melted
Filling:
10 ounces semisweet or bittersweet chocolate, chopped (use the best quality you can afford – I love the Ghirardelli Bittersweet Chips and I’m not ashamed to admit I buy them in bulk, often, at Sam’s Club)
4 (8-ounce) packages cream cheese, room temperature
1 1/4 cups plus 2 tablespoons sugar
1/4 cup unsweetened cocoa powder
4 large eggs
Topping:
3/4 cup whipping cream
6 ounces semisweet or bittersweet chocolate, chopped
1 tablespoon sugar
Chocolate curls for garnish (I use this method)

For crust: Preheat the oven to 350°F. Butter a 9-inch springform pan with 3-inch-high sides (or use a 10-inch springform pan with 2-inch sides). Process the chocolate cookies in a food processor (or the old-fashioned way with a bag and a rolling pin) until they are finely ground. Transfer them to a small bowl and mix in the sugar. Add the melted butter and mix until well combined. Press the crumbs evenly onto the bottom only of the prepared pan. Bake just until set, about 5 minutes. Cool while preparing filling. Keep the oven heated at 350 degrees.
For filling: Melt the 10 ounces of chocolate in the microwave or in a double boiler until melted and smooth. Cool the chocolate until lukewarm but ensure that it is still warm enough to be pourable. In a large bowl (or with a stand mixer), blend cream cheese, sugar, and cocoa powder until smooth. Blend in eggs one at a time. Mix in lukewarm chocolate. Pour the cheesecake filling over the crust; smooth the top. Bake until the center is just set and just appears dry, about 1 hour. Remove the cheesecake from the oven and cool on a wire rack for 10 minutes. Run knife around sides of cake to loosen. Let the cheesecake cool to room temperature. Cover lightly with plastic wrap and chill overnight.
For topping: One hour before serving (or up to 3 days ahead of time), stir cream, 6 ounces chocolate, and sugar in heavy medium saucepan over low heat until smooth. Cool slightly. Pour over the center of the cheesecake, spreading to within 1/2 inch of edge and filling any cracks. Chill until the topping is set, about 1 hour.
When ready to serve, release the springform pan sides. Transfer the cheesecake to a platter. Top with chocolate curls. It is preferable to let the cheesecake stand at room temperature for 1-2 hours before serving.

Chocolate Mint Ice Cream Dessert

Holy delicious. What I've decided lately is that there are too many recipes that try too hard. With too many different ingredients trying to be the best recipe blog {for example-Chocolate Orange Basil Brownies...really?}. So I love getting back to the basics of mint and chocolate. Plus anything with whipped topping on it is amazing.

Chocolate Mint Ice Cream Dessert
1 row of chocolate sandwich cookies, crushed fine
2 tablespoons of butter
Hot fudge
1 carton of mint ice cream {I like mint chocolate cookie the best}
8 ounce whipped topping
extra chocolate sandwich cookies, crushed

Mix the chocolate sandwich cookies with butter. Press them into a 9x9 {or 8x8}. Put a layer of fudge on top. Soften ice cream, then spread the ice cream across the fudge. Freeze for a few hours at least. Spread whipped topping, then add crushed chocolate sandwich cookies and fudge.

{Grandma's} Pudding Dessert

Another of Grandma's classics that I could never live without. There are so many versions of this, I'm sure, but I'm saying this is the best. Because it is.

1 cube margarine, softened
1 cup flour
1 cup walnuts, chopped
Cream cheese layer:
1 8 ounce cream cheese
1 cup powdered sugar
1 cup cool whip
Jello layer:
2 small chocolate pudding
3 cup milk
Topping:
Cool whip
chopped nuts
grated chocolate

Preheat oven to 350. Mix margarine, flour and walnuts together well, then press into a 9x13 pan. Bake for 15 minutes.
Whip cream cheese and powdered sugar together, then fold in cool whip.
Beat pudding and milk for one minute, then put on top of cream cheese layer. Let the pudding set, then add cool whip and any other topping you desire. Refrigerate unless serving.

Devil's Food Cookies

These are super good, super easy, not healthy. Really they're cake mix cookies, but I've tried a few different chocolate mixes, but Devil's Food is the best…the absolute best.

1 Devil's food cake mix
1/2 cup oil
2 eggs
1 teaspoon vanilla
1/2-1 package chocolate chips

Combine all ingredients well {the mixture will be very thick}. Mix at 350 for 10 minutes.

Caramel Brownies

I grew up with my aunt bringing these to most family functions and…holy cow we were always pumped! They are amazing! I love the perfect texture of the caramel…and the nuts!

Caramel Brownies
50 caramels {about 1 bag}
2/3 cup evaporated milk, divided
1 package German chocolate cake mix
3/4 cup melted butter
1 cup chopped nuts {pecans are my fave}
1 cup chocolate chips

Preheat oven to 350 and grease a 9x13 pan.
Combine caramels and 1/3 cup of the evaporated milk. Melt in saucepan on low heat.
In large bowl, combine butter, the other 1/3 cup evaporated milk, cake mix, and nuts. Mix until well combined. Press half of the mixture into the pan and bake for 8 minutes.
After it's done baking, spread the caramel mixture on top, sprinkle the chocolate chips, then add the other half of the cake mix. Bake for another 18-25 minutes. Best when cooled fully {or put into the fridge if you're too impatient!}.

Whole Grain Banana Chocolate Chip Muffins

I love muffins. I really don't know what it is about muffins, but I have this love affair with them and I feel like I can never have too many. Part of it is probably the face that you can freeze muffins and keep them for awhile. I love making then freezing breakfast food. These are awesome and are probably my kids favorite muffins.

Whole Grain Banana Chocolate Chip Muffins
2 average-sized bananas, peeled and mashed
1/3 cup packed light brown sugar (optional)
1/2 cup plain yogurt
1 large egg
1/2 cup unsweetened applesauce
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 to 1/2 cup mini chocolate chips

Preheat the oven to 375 degrees F. Lightly grease a 12-cup muffin tin or line with cupcake liners (lightly grease the muffin liners if using).
In a large bowl, whisk together the bananas, sugar, yogurt, egg, and applesauce.
In a small bowl, combine the flour, baking powder, baking soda, salt and chocolate chips.
Fold the dry ingredients into the wet ingredients and stir just until combined. Don't overmix.
Spoon the batter evenly into the muffin cups. Bake for 16-18 minutes until a toothpick inserted in the center of a muffin comes out clean.
Remove the muffins from the tin and let them cool completely on a wire rack.

{Grandma's} Pumpkin Chocolate Chip Cookies

Another "one" of my Grandma Schwartz's recipes. It might be my favorite. Seriously, I love these things so much. I have never in my entire life had a Pumpkin chocolate chip cookie ever come near to touching the delicious, softness of this one. It's a keeper.

{Grandma's} Pumpkin Chocolate Chip Cookies
1 cube butter, softened
1 cup brown sugar
2 eggs
1 teaspoon vanilla
3/4 cup pumpkin
2 1/4 cup flour
1 teaspoon soda
2 teaspoon cinnamon
1 teaspoon pumpkin spice
1/2 teaspoon salt
1/2-1 bag chocolate chips
nuts, optional

Cream butter, sugars, eggs, vanilla and pumpkin until smooth.
Place flour, soda, cinnamon, pumpkin spice and salt in a sifter. Sift half of flour mixture into the pumpkin mixture. Then the other half. Mix well.
Bake at 400 for 10-12 minutes. {10 was perfect for me}

Chocolate Mousse Cheesecake Pie

Awesomely delicious. Kind of time consuming, but worth it for something special.

Crust:
24 Oreos, or other chocolate sandwich-type cookie, crushed
5 tablespoons butter, melted
Cheesecake Filling:
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 egg yolk
1 teaspoon vanilla
1 cup sour cream

Mousse:
1 cup heavy cream, divided
2 egg yolks
1/2 cup semisweet chocolate chips
1/4 cup powdered sugar (optional for sweetness)
Ganache:
1/2 cup semisweet chocolate chips
4 tablespoons butter
1/4 cup heavy cream
1/2 teaspoon vanilla
1 tablespoon powdered sugar

Preheat the oven to 325 degrees F.
For the crust, combine the crushed Oreo cookies and the melted butter. Press the mixture into the bottom and up the sides of a deep dish 9-inch pie plate. Refrigerate while you make the filling.
For the filling, with a handheld electric mixer or in the bowl of a stand mixer, blend together the softened cream cheese and granulated sugar until smooth. Add the egg, egg yolk, and vanilla and mix until combined. Blend in the sour cream. Spread the filling over the cookie crust and bake for 40-45 minutes, until the edges are set and the center is slightly firm (a little softness is ok but you don't want it to be really jiggly). Remove the pie from the oven and let it cool completely on a wire rack.
For the mousse, heat 1/2 cup cream in a small saucepan until just simmering. Place the egg yolks in a small bowl. Whisking vigorously, pour a couple tablespoons of the hot cream into the egg yolks and continue whisking until completely combined. Pour the tempered egg yolks into the saucepan with the remaining hot cream, whisking quickly the whole time, and return the saucepan to medium-low heat, cooking while stirring constantly, until the cream/egg mixture bubbles and thickens, 1-2 minutes. 

Remove from the heat and stir in the chocolate chips, whisking until the mixture is smooth and the chocolate is completely melted. If you used a darker chocolate and would like a bit more sweetness, whisk in up to 1/4 cup powdered sugar. Let the mixture cool to room temperature, whisking occasionally to avoid a skin forming across the top. When completely cool, beat the remaining 1/2 cup cream to stiff peaks and gently fold into the completely cooled chocolate mixture. Spread the mousse over the top of the cooled cheesecake pie and refrigerate.
While the pie chills, make the ganache by combining the butter and heavy cream in a saucepan over medium heat until the butter is melted and the mixture is simmering. Place the chocolate in a small bowl. Pour the hot cream mixture over the chocolate and stir until glossy and smooth. Stir in the vanilla and powdered sugar. Spread the ganache over the mousse and refrigerate the pie until ready to serve (at least an hour - the pie can be made up to a day in advance).

Chocolate Chip Cookie Dough Cheesecake

I love cheesecake. Have I ever said that before? Probably. Add anything to cheesecake, and I love it so much more…especially when it has cookie dough in it. Um…so so yummy.

Crust:
4 tablespoons butter, melted
2 1/2 cups chocolate cookie crumbs
Filling:
4 (8-ounce) blocks cream cheese, softened to room temperature
1 cup sugar
4 large eggs
1 teaspoon all-purpose flour
1 teaspoon vanilla
1 cup sour cream (I used light and it worked just fine)
Cookie Dough:
½ cup butter, softened
½ cup sugar
½ cup packed light brown sugar
2 tablespoon water or milk
2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
1 cup mini chocolate chips
An additional 1 cup mini chocolate chips to fold into the batter with the cookie dough balls
Garnish:
1 cup heavy whipping cream, whipped to stiff peaks(add 1 tablespoon powdered sugar while whipping if you like a bit of extra sweetness)
Mini chocolate chips, for sprinkling

For the cookie dough:
In a medium bowl, combine the butter and sugars for the cookie dough. Add the water (or milk), vanilla and blend. Mix in the flour, salt and the chocolate chips. The dough will be fairly soft. Gently roll the dough into small balls (about a teaspoon size, maybe a bit larger) and place them on a wax paper lined plate or baking sheet. Place them in the freezer to harden while making the rest of the cheesecake.

For the crust:
Lightly grease the bottom and sides of a 10-inch springform pan. In a medium bowl, combine the butter with the chocolate cookie crumbs (you could easily use a food processor to crush the cookies and incorporate the butter). Press onto the bottom and about halfway up the sides of the prepared pan.
For the cheesecake:
Using an electric mixer on high speed, beat the cream cheese, sugar, eggs and flour until smooth. Add the vanilla and sour cream and mix just until blended. Be careful not to overmix – incorporating too much air into the batter can contribute to a cheesecake cracking on top during baking.
Pour half the batter into the prepared crust. Gently stir in the cookie dough balls and the additional 1 cup mini chocolate chips into the remaining batter. Pour into the pan, spreading the batter to the sides of the pan and evening it out across the top (it is ok to see bumps of cookie dough here and there, smooth it the best you can). Bake the cheesecake at 325 degrees for one hour. Turn off the oven and prop the door open several inches. Let the cake sit in the oven for an additional 30 minutes. Remove the cake from the oven and let it cool completely on a wire rack. Refrigerate until chilled (ideally, overnight). To serve, cut into slices and top with whipped cream and mini chocolate chips.

Caramel Brownies

Caramel plus brownies. Plus Pecans?!? Please! Now! Love them.

Caramel Brownies
For the Brownies:
1 cup (2 sticks) butter
12 ounces bittersweet or semisweet chocolate, coarsely chopped
1½ cups sugar
4 large eggs
1 tablespoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon salt
1½ cups pecans, coarsely chopped (optional) {Not optional in my opinion}
1 cup semisweet chocolate chips

For the caramel filling:
14 ounces caramel candies, unwrapped
1/4 cup heavy cream

Preheat the oven to 350 F. Line a 9×13-inch baking pan with foil and grease the foil well with butter or cooking spray. In a large, microwave-safe bowl, combine the chopped chocolate and butter. 

Microwave in intervals of 1 minute at 50% power until the chocolate is melted and the mixture is smooth, stirring in between intervals. Whisk in the sugar, eggs and vanilla until incorporated. Stir in the flour and salt just until combined. Spread about half of the brownie batter in the bottom of the prepared pan in an even layer. Bake for 18 minutes. Remove from the oven (keep the oven on!) and let the brownies cool for 20 minutes.
Meanwhile, add the chopped pecans (if using) to a medium skillet over medium heat. Toast, stirring occasionally, until fragrant and light golden brown. Remove from the heat and set aside. To make the caramel filling, combine the caramels and cream in a medium microwave-safe bowl. Microwave for 30 seconds at 50% power. Stir. Repeat the process, keeping a close eye on the mixture as it can burn very easily (make sure you use low heat in the microwave). Continue the microwave process until the caramels and cream are melted and combined. Stir in half ALL of the pecans to the caramel mixture. Immediately spread the caramel mixture over the bottom brownie layer. Scoop the remaining brownie batter in spoonfuls over the caramel layer and spread it evenly across the caramel layer (spooning the batter in piles over the caramel will help to get an even layer of batter over the caramel). Sprinkle the chocolate chips on top of the final brownie layer. Bake for 20 minutes. 

Transfer to a wire rack and let cool completely before slicing and serving. I found the brownies sliced easier once they had been cooled and refrigerated for an hour or two.
Lift the brownies from the pan using the edges of the foil. Remove the foil and cut the brownies into individual squares. Store in an airtight container.

Scott's Chocolate Chip Cookies

I don't know why these turned into Scott's chocolate chip cookies. It probably has something to do with the fact that he {with our good friend Bret} pounded almost the entire bowl of cookie dough. So we know for sure that we love the cookie dough, and the cookies are pretty awesome too.

½ c. butter
½ c. high-quality tub margarine {or stick margarine}
¾ c. white sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
3 c. flour
¾ tsp. salt
¾ tsp. baking soda
1 12-oz. bag chocolate chips

Preheat oven to 350.

Cream together butter, margarine, sugars, eggs, and vanilla. In a separate bowl, sift together flour, salt, and baking soda. Add to creamed mixture and beat well. Stir in chocolate chips.

Drop onto cookie sheet by tablespoon or with a cookie scoop. You should get 12 cookies per sheet.
Bake at 350 degrees for 10-12 minutes until lightly browned. Naturally, you want to keep an eye on them because every oven is different. Makes about 4 dozen.

Allow to cool for a few minutes on the pan and then transfer to a wire cooling rack.

Walnut Chocolate Chip Blondies

I've never had the Applebee's version, but these babies rock…baby. I really want to try pecans with these, mostly because pecans are awesome. So I figure two awesomes make a double awesome.

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
10 tablespoons butter
2 cups packed light brown sugar
2 large eggs
2 teaspoons vanilla
3/4 cup semisweet or milk chocolate chips
3/4 cup chopped walnuts (or pecans)

Preheat the oven to 350 degrees F. Line a 9X13-inch pan with foil and lightly grease with cooking spray.

In a medium microwave-safe bowl, melt the butter. Add the brown sugar and mix well. Add the eggs and vanilla and mix. Add the flour, baking powder, salt and baking soda and blend until combined.
Spread the batter in the prepared pan. Sprinkle the chocolate chips and nuts over the batter. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
If desired, serve warm with a scoop of ice cream.

Sinfully Sinless Tiramisu

Okay, I totally kept the name that I found with this recipe, because there is no coffee or rum, but it is so delicious…it should be sinful. I've never had tiramisu before this. And I was pleasantly {understatement} surprised at how I've been missing something so amazing in my life. Now I know. And I'm trying to not let anyone else go without. So enjoy!

Sinfully Sinless Tiramisu
1 ½ cups good-quality hot chocolate, made with water and using 1 ½ times the hot chocolate powder
½ teaspoon rum extract
½ tablespoon pure vanilla extract
4 large egg yolks
½ cup granulated sugar
1/8 teaspoon salt
¼ cup heavy whipping cream
8 ounces mascarpone cheese (can sub cream cheese in a pinch) {and I did}
½ cup heavy whipping cream
About 36 crisp ladyfingers cookies/biscuits
1 tablespoon natural cocoa powder

Make the hot cocoa according to the instructions above – using water instead of milk and using 1 ½ the amount of hot chocolate powder you would normally use to make a cup for drinking. Allow the hot cocoa to cool while you are preparing the rest of the recipe. Once it is lukewarm, add the vanilla and imitation rum extract. Due to the high cocoa to water ratio, whisk the cocoa mixture frequently to keep the cocoa suspended.

Set a medium saucepan over medium heat and fill with about 1-2 inches water. Let it come to a simmer while you proceed with the recipe. In a medium bowl (an appropriate size to be placed on the pan that is heating), beat the egg yolks at low speed with a mixer (hand or electric) until just combined. Add the ½ cup sugar and salt and beat at medium-high speed until pale yellow, 1 1/2 to 2 minutes, scraping down the bowl with a rubber spatula once or twice. Add ¼ cup cream to the yolks and beat at medium speed until just combined, 20 to 30 seconds; scrape the bowl. Set the bowl with the yolks over the saucepan of water that has come to a simmer. Cook the egg yolk mixture, stirring constantly and scraping along the bottom and sides of the bowl with a heatproof rubber spatula, until the egg yolk mixture coats the back of a spoon, about 4 to 7 minutes. Remove the bowl from the heat and stir vigorously to cool slightly, then set aside to cool to room temperature, about 15 minutes.
Add the mascarpone cheese to the cooled mixture and beat at medium speed until no lumps remain, about a minute. Transfer the mixture to a large bowl and set aside. In the now-empty bowl (no need to clean the bowl), beat the ½ cup heavy whipping cream at medium-high speed until stiff peaks form. 

Using a rubber spatula, fold 1/3 of the whipped cream into the mascarpone mixture. Then gently fold in the remaining whipped cream until no white streaks remain. Set the mixture aside.
Give the hot cocoa mixture a good whisk to combine. Pour it into a shallow baking dish like a pie plate. 

Dip 1 ladyfinger into the hot cocoa at a time, allowing it to soak up the hot cocoa for about 1-2 seconds per side. Transfer each ladyfinger immediately to an 8-inch square baking dish. Lay the cookies side-by-side to create one even layer. You may have to trim/break the soaked cookies to fit the pan. After finishing the first layer of ladyfinger cookies, spread half of the mascarpone cream mixture evenly over the ladyfingers, spreading to the edges of the pan. Using a small fine-mesh strainer, sprinkle 1/2 tablespoon of the natural cocoa powder over the mascarpone layer.
Repeat the soaking process with the ladyfingers, creating one more layer of ladyfinger cookies over the mascarpone/cocoa layer. Spread evenly with the remaining mascarpone mixture. Dust with the final 1/2 tablespoon of natural cocoa powder. Refrigerate for at least 4 hours to chill and set. This can be made up to 1 day in advance. Cut into squares and serve.


*Note: Let’s talk about this dessert a moment, shall we? Traditional tiramisu is made with espresso-and-rum-soaked ladyfingers. The mascarpone layer is also usually lightened with silky, fluffy beaten egg whites. The version below, created by my brother and further adapted by me, has subbed in hot cocoa and rum extract for the espresso and rum and I’ve employed the technique of cooking the egg yolks and making a custard of sorts instead of using egg whites, since I know many people are nervous about eating raw eggs. This makes my version a bit more dense than authentic tiramisu since the creamy layer is like a pudding or custard…but since I basically threw authenticity out the window to begin with, I went with the cooking-the-eggs method. The result is incredible, I promise.

Reeses Krispies

Okay, super easy. And we love Reese's so fetchin much. My whole family. So I made these for Mallory. Thanks Auntie Mal Mal for making me make something easy and delicious.

Reeses Krispies
1 cup sugar
1 cup corn syrup
1 1/3 cup creamy peanut butter
4 1/4 cup rice krispies
1 pinch of salt
4 reese's peanut butter cups, chopped (we use 6)
1 handful chocolate chips (we use 1/2 cup)

In a large sauce pan over medium heat, melt the sugar, corn syrup, and peanut butter until smooth and evenly combined.
Remove from heat.
Quickly add the salt and cereal and stir to combine thoroughly. add the chocolate chips and stir again. wait about 1 min and add the candy, quickly folding the mixture together so as to not smash up the candy.
Line a baking sheet with parchment paper and drop rounded tablespoons onto the sheet. let cool and devour!
